Zuppa di fagioli

Ingredienti

  • Fagioli secchi (toscanelli o cannellini) - 300 gr
  • Cavolo nero (in mancanza: spinaci) - 200 gr
  • Passato di pomodoro - 200 gr
  • Olio extravergine d'oliva - qb
  • Pane raffermo toscano - 8 fette
  • Aglio - 1 spicchio
  • Sale - qb
  • Pepe - qb

Preparazione

  1. Lasciare a bagno i fagioli in acqua fredda per una notte per poi cuocerli in abbondante acqua, senza sale, a fuoco lento.

  2. Da parte, mondare il cavolo nero (o gli spinaci), lessarli e quindi ripassarli in padella con aglio, olio, pomodoro, sale e pepe.

  3. Unire i fagioli lessati agli spinaci e lasciare insaporire il tutto.

  4. Versare la zuppa sulle fette di pane ed irrorare con olio extra vergine d'oliva.
